Just say you're focusing on other things your job has to offer at the time, but there are a lot of other qualified professionals they can contact.

I would just say "Thank you for asking but I am a portrait focused photographer so I can't shoot your wedding" Maybe have some referrals you can give them (if you know of a ! good professional photographer that does weddings).
